Did you add your Zune back to the Zune program after you told it to forget this device? Did you try connecting as a guest? After connecting one of those two ways you should be able to click on device and see the music or videos.
The first thing I would do is connect the Zune and open the Zune program. Update the firmware to 2.5 if you haven’t done so already. I don’t know if you can do the update if you are connected as a guest but you can try.
Then click on device>settings>sync options and change it to allow you to choose. This should allow you to delete files from your computer and still allow you to keep them on the Zune. That was one of the features that was improved with the new update.
